Slow-Roasted Pork with Carrots, Onions & Garlic

I have been waiting for the weather to turn chilly to post this recipe. I made it earlier this year and it was so delicious! Slow-Roasted Pork Shoulder with Carrots, Onions & Garlic. So foolproof and easy. Here is a breakdown of Pork Shoulder, as it does go by other names.

The great thing about this recipe is that once you have roasted it, you should have leftovers, and then you can use them throughout the week for other recipes. I used ours to make Pork and Potato Hash with Poached Eggs like the article suggested. It was outstanding!

I just bought a whole bunch of pork at Sprouts, as the price was great. I will probably roast it all at once, then freeze the extra. It makes it so easy on nights when you don't want to think about cooking, just thaw and you are ready to go!
